The wheat germ is the part of the wheat berry that is packed with nutrients. The wheat berry or grain is made up of the outer shell called wheat bran (Schullo Wheat Bran Which you probably already have), the endosperm which is ground into flour (Schullo Organic Flour that you love), and the wheat germ which contains many of the nutrients needed for reproduction of the plant.  What is unbleached flour? It is flour with the bran and wheat removed and aged naturally. Unbleached flour naturally retains nutrients, is high in fiber, Folic Acid, Magnesium and Phosphorus, a good source of Zinc, also nutrients such as Vitamin B1, Vitamin B2, Vitamin B3 and Iron. When Flour is left to age as nature intended, the carotenoids or pigments whiten on their own. It´s naturally white, and no additives or chemicals are added whatsoever in the process. Just wonderful!
