Peanut Butter Cookie Bars

Wet ingredients

2 eggs

1 cup Schullo Raw Sugar

¾ cup Schullo Peanut Butter

¼ cup melted and cooled coconut oil

1 tsp Schullo Vanilla Extract

Dry ingredients

1 cup almond flour

½ cup Schullo Rolled Oats (if you prefer thicker bars, use ¾ cup)

½ tsp baking soda

¼ tsp salt

1 cup Schullo Organic Chocolate Chips, divided

Instructions

1. Preheat the oven to 347 F (175°C) and prepare an 8x8-inch baking pan

2. In a large bowl, mix the eggs, sugar, and peanut butter until creamy. Then add the coconut oil and vanilla and mix again. There should not be any separation of oil

3. Add the dry ingredients: almond flour, oats, baking soda, and salt, and mix until well combined

4. Finally, fold in the chocolate chips, reserving a little to sprinkle on top

5. Pour the mixture into the pan and spread it evenly with a spatula toward the edges. Sprinkle with the remaining chocolate chips

6. Bake for 20–25 minutes or until the edges are golden brown. 

(They should be slightly moist on the inside)

Tip: Once they come out of the oven, sprinkle them with sea salt and let them cool for 15–20 minutes before cutting them so they don’t crumble.
